Zoodles – Noodles made from Courgettes

I will admit to you, there is nothing that can replace freshly made pasta; however when watching our carbs we cannot possibly afford to consider pasta; but we do not have to miss out on those favourites such as Bolognese and Carbonara and with these Zoodles made from courgettes compliment your favourite pasta sauce dishes well. TIP: You do need to plan ahead when using Zoodles as you will need to leave them to drain. The longer they drain, the dryer they will be. Courgettes are full of water and so if you do not drain as much moisture out as possible then you will end up with a soggy mess which will neither taste that good and will make your sauce sloppy.

There are hundreds of Zoodle recipes on the internet and you will find a range of ways to dry the Zoodles out and how to then cook them. I have tried a fair few ways but I am going to share with you the one that I find the most effective considering the end product and how much time they take.

You can use a gadget called a Spiralizer to make the Zoodles. There are plenty available online or you can use a peeler. A Spiralizer with make your Zoodles look like spaghetti whereas the peeler will look more like tagliatelle. My picture is of the peeler version – not quite as elegant looking as Spiralized.

  • 1 Medium Courgette
  • 1 Tbsp Olive oil
  • Knob of butter
  • Salt and pepper


  1. Prepare the raw “Zoodles” using your chosen implement - a Spiralizer or potato peeler. Place them in a colander, sprinkle liberally with salt (this will help draw the moisture out), cover with kitchen tissue, place a plate on top and weigh down (eg. With a book or a cup with water in it). This will help squeeze the water from the courgettes. Leave this to drain for at least an hour.

  2. In a large bottomed saucepan, a frying pan or wok, heat about a tablespoon of olive oil and a knob of butter until it is nice and hot.

  3. Squeeze the noodles with your hands over a bowl to remove as much final moisture as you can and throw them into the sizzling pan.

  4. Move the Zoodles about the pan ensuring they do not catch on the bottom; you do not want them to turn brown.  They should be cooked within about 3 minutes. If you are cooking for more than 2 people, i suggest you cook in batches.

  5. Add pepper to taste and serve with your chosen sauce.
